- 8 chicken thighs, bone-in and skin-on
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 3 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- In a bowl, whisk together olive oil, lemon juice, garlic, rosemary, thyme, salt, and pepper to create the marinade.
- Place the chicken thighs in a large resealable bag or a shallow dish and pour the marinade over them. Seal the bag or cover the dish and refrigerate for at least 2 hours, or overnight for best results.
- Preheat the grill to medium-high heat.
- Remove the chicken from the marinade and place it on the grill, skin side down. Discard the remaining marinade.
- Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the skin is crispy.
- Remove the chicken from the grill and let it rest for a few minutes before serving.
