- 2 ripe peaches, halved and pitted
- 4 cups arugula
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
- 1/4 cup crumbled feta cheese
- 1/4 cup toasted almonds
Instructions
- Preheat the grill to medium-high heat.
- Brush the peach halves with olive oil.
- Place the peaches on the grill, cut side down, and grill for about 4-5 minutes until they have grill marks and are slightly softened.
- Remove the peaches from the grill and let them cool slightly, then slice them.
- In a large bowl, combine arugula, grilled peach slices, feta cheese, and toasted almonds.
- In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
- Drizzle the dressing over the salad and toss gently to combine.
- Serve immediately.
