Description

Ingredients

  • 2 ripe peaches, halved and pitted
  • 4 cups arugula
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste
  • 1/4 cup crumbled feta cheese
  • 1/4 cup toasted almonds

Instructions

  1. Preheat the grill to medium-high heat.
  2. Brush the peach halves with olive oil.
  3. Place the peaches on the grill, cut side down, and grill for about 4-5 minutes until they have grill marks and are slightly softened.
  4. Remove the peaches from the grill and let them cool slightly, then slice them.
  5. In a large bowl, combine arugula, grilled peach slices, feta cheese, and toasted almonds.
  6. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
  7. Drizzle the dressing over the salad and toss gently to combine.
