Description

Pineapple Chicken Lettuce Cups offer a refreshing and tropical twist on traditional lettuce wraps, perfect for a light and flavorful summer meal.


Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts, diced
  • 1 cup fresh pineapple, diced
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon ginger, minced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1/4 cup green onions, sliced
  • 1 head of butter lettuce, leaves separated
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the diced chicken and cook until browned and cooked through, about 5-7 minutes.
  3. Add the garlic and ginger to the skillet and sauté for 1 minute until fragrant.
  4. Stir in the soy sauce, pineapple, and red bell pepper. Cook for another 3-4 minutes until the pineapple is heated through.
  5. Season with salt and pepper to taste.
  6. Remove from heat and stir in the green onions.
  7. Serve the chicken mixture in lettuce leaves, wrapping them up to form cups.

Notes

  • For a spicier version, add a pinch of red pepper flakes.
