- 1 pound boneless, skinless chicken breasts, diced
- 1 cup fresh pineapple, diced
- 1 tablespoon soy sauce
- 1 tablespoon olive oil
- 1 teaspoon ginger, minced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1/4 cup green onions, sliced
- 1 head of butter lettuce, leaves separated
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the diced chicken and cook until browned and cooked through, about 5-7 minutes.
- Add the garlic and ginger to the skillet and sauté for 1 minute until fragrant.
- Stir in the soy sauce, pineapple, and red bell pepper. Cook for another 3-4 minutes until the pineapple is heated through.
- Season with salt and pepper to taste.
- Remove from heat and stir in the green onions.
- Serve the chicken mixture in lettuce leaves, wrapping them up to form cups.
Notes
- For a spicier version, add a pinch of red pepper flakes.
- Can be served with a side of rice for a more filling meal.
