  • 1 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 cup fresh raspberries

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
  3. Add the eggs and vanilla extract, mixing until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. In another bowl, beat the cream cheese and powdered sugar until smooth.
  7. Fold in the fresh raspberries gently into the cream cheese mixture.
  8. Take a scoop of cookie dough, flatten it, and place a spoonful of the raspberry cheesecake mixture in the center. Fold the dough over to seal it.
  9. Place the stuffed cookies on a baking sheet lined with parchment paper.
  10. Bake for 12-15 minutes or until the edges are golden brown.
