Ingredients
  

For Cauliflower Wings

  • 1 medium head cauliflower cut into florets
  • 1 cup all-purpose flour (or almond flour for gluten-free)
  • 1 tsp garlic powder
  • 1 cup milk (regular or plant-based)
  • 1 cup buffalo sauce
  • 2 tbsp unsalted butter melted
  • 1 tsp garlic powder
  • salt and pepper to taste

For Serving

  • 0.5 cup ranch or blue cheese dressing optional
  • 4 sticks celery cut into sticks

Instructions
 

  • Preheat oven to 450°F (230°C). Line a baking sheet with parchment paper.
  • Whisk flour, milk, garlic powder, salt, and pepper in a large mixing bowl until smooth batter forms.
  • Dip cauliflower florets into batter, coating evenly. Arrange on baking sheet lined with parchment paper.
  • Bake cauliflower for 20 minutes until lightly golden and crisp.
  • Remove cauliflower from oven, toss gently in buffalo sauce to evenly coat.
  • Return to oven for another 10 minutes until crisp and sauce is caramelized.
  • Serve immediately with celery sticks and ranch or blue cheese dressing.

Notes

Adjust spice level by using more or less buffalo sauce. For crispier texture, broil cauliflower for an additional 2-3 minutes at the end.
