Ingredients
  

For the Cauliflower Mac and Cheese

  • 1 large head cauliflower cut into bite-sized florets
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1.5 cups whole milk
  • 1.5 cups shredded cheddar cheese
  • 0.5 tsp garlic powder
  • salt and pepper to taste
  • 0.5 cup breadcrumbs optional, for topping
  • fresh parsley chopped, for garnish

Instructions
 

  • Preheat oven to 375°F (190°C). Grease a baking dish.
  • Steam or boil cauliflower florets until tender but firm, about 5-6 minutes. Drain well and set aside.
  • Melt butter in a saucepan over medium heat. Whisk in flour and cook for 1 minute, stirring continuously to make a roux.
  • Slowly whisk in milk, cooking until sauce thickens slightly, about 3-4 minutes.
  • Add cheddar cheese, garlic powder, salt, and pepper, stirring until cheese melts and sauce is creamy.
  • Combine steamed cauliflower with cheese sauce, tossing gently until well-coated.
  • Pour cauliflower mixture into a baking dish. Sprinkle optional breadcrumbs on top.
  • Bake for 25 minutes until bubbling and golden-brown. Garnish with fresh parsley before serving hot.

For a keto-friendly version, omit breadcrumbs or use crushed pork rinds instead. Feel free to experiment with different cheeses for varied flavor.
