Ingredients
  

For the Cauliflower Crust

  • 1 medium head cauliflower riced (about 4 cups)
  • 1 egg large, lightly beaten
  • 0.5 cup shredded mozzarella cheese
  • 0.25 cup grated Parmesan cheese
  • 1 tsp dried oregano
  • 0.5 tsp garlic powder
  • salt and pepper to taste

Optional Toppings

  • 0.5 cup pizza sauce
  • 1 cup shredded mozzarella cheese
  • fresh basil leaves for garnish

Instructions
 

  • Preheat oven to 450°F (230°C). Line a baking sheet or pizza pan with parchment paper.
  • Rice the cauliflower using a food processor or grater. Steam or microwave until tender, about 4-5 minutes, then cool slightly.
  • Place cauliflower in a clean kitchen towel or cheesecloth, and squeeze out excess moisture (this ensures a crisp crust).
  • In a bowl, combine cauliflower, beaten egg, mozzarella, Parmesan, oregano, garlic powder, salt, and pepper. Mix until combined.
  • Spread cauliflower mixture evenly on the prepared baking sheet into a thin, round crust. Bake for 15-20 minutes until golden.
  • Remove crust from oven, add pizza sauce, mozzarella, and desired toppings. Bake again for 8-10 minutes until cheese melts and bubbles.
  • Garnish with fresh basil, slice, and serve hot.
