Ingredients
  

For the Cauliflower Tacos

  • 1 medium head cauliflower cut into bite-sized florets
  • 2 tbsp taco seasoning
  • 1 tbsp olive oil
  • 8 corn tortillas warmed
  • 0.5 cup shredded cabbage purple or green
  • 0.25 cup fresh cilantro chopped
  • 1 lime cut into wedges

Spicy Mayo Sauce

  • 0.5 cup mayonnaise
  • 2 tbsp sriracha sauce

Instructions
 

  • Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • In a mixing bowl, toss cauliflower florets with olive oil and taco seasoning until evenly coated.
  • Spread cauliflower on prepared baking sheet in a single layer. Roast for 20 minutes, or until crispy and golden-brown.
  • Prepare the spicy mayo by mixing mayonnaise and sriracha sauce in a small bowl until smooth.
  • Warm corn tortillas on a skillet or microwave briefly until soft and pliable.
  • Assemble tacos by placing roasted cauliflower onto tortillas, topping with shredded cabbage, chopped cilantro, and a generous drizzle of spicy mayo.
  • Serve immediately with lime wedges on the side.
