  • 400 grams spaghetti uncooked
  • 150 grams pancetta diced
  • 2 cloves garlic minced
  • 2 eggs large
  • 1/2 cup Parmesan cheese grated
  • 1/4 cup Pecorino cheese grated
  • 1 tsp black pepper freshly ground
  • to taste salt

Instructions
 

  • Boil a large pot of salted water and cook spaghetti until al dente.
  • In a frying pan, cook the pancetta until crispy, then add garlic and sauté for 1-2 minutes.
  • In a bowl, whisk together eggs, Parmesan, Pecorino, and black pepper.
  • Drain spaghetti and immediately toss with the pancetta mixture in the frying pan.
  • Remove from heat and quickly mix in the egg and cheese mixture, stirring until creamy.
  • Serve immediately, garnished with extra Parmesan and black pepper.

Notes

Make sure to use freshly grated cheese for the best flavor. Avoid adding cream; the creaminess comes from the eggs and cheese.
