Ingredients
  

For Cauliflower Bites

  • 1 medium head cauliflower cut into florets
  • 2 eggs beaten
  • 1 cup panko breadcrumbs
  • 0.5 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 0.5 tsp paprika
  • salt and pepper to taste
  • olive oil cooking spray

For Serving (Optional)

  • 0.5 cup ranch or buffalo sauce for dipping

Instructions
 

  • Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • In a bowl, combine panko breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.
  • Dip cauliflower florets into beaten eggs, then roll in breadcrumb mixture until evenly coated.
  • Arrange coated cauliflower florets in a single layer on the parchment-lined baking sheet.
  • Lightly spray cauliflower with olive oil cooking spray to enhance crispiness.
  • Bake for 20-25 minutes, flipping halfway through cooking, until golden-brown and crispy.
  • Serve hot with ranch or buffalo sauce for dipping.

Notes

For a gluten-free version, substitute panko breadcrumbs with almond flour or gluten-free breadcrumbs. Adjust seasonings according to your preference.
