  • 1 lb ground beef 80/20 blend preferred for best flavor
  • 1 cup long-grain white rice uncooked
  • 1 can French onion soup (10.5 oz)
  • 1 can cream of mushroom soup (10.5 oz)
  • 1 cup beef broth low sodium recommended
  • 1/2 cup sour cream
  • 1 cup shredded Swiss cheese or mozzarella
  • 1/2 cup crispy fried onions for topping
  • 1 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/2 tsp salt adjust to taste
  • 2 tbsp butter for caramelizing onions
  • 1 medium onion thinly sliced

Instructions
 

  • Preheat the oven to 350°F (175°C) and grease a 9x13-inch casserole dish.
  • In a large skillet, melt butter over medium heat. Add sliced onions and cook until caramelized, about 10 minutes.
    Slice into bite-sized pieces and serve with salsa, guacamole
  • Add ground beef to the skillet, breaking it apart as it cooks. Cook until browned, then drain excess grease.
  • In a mixing bowl, combine French onion soup, cream of mushroom soup, beef broth, Worcestershire sauce, garlic powder, salt, and pepper. Stir well.

  • Add uncooked rice and sour cream to the soup mixture and stir until well combined.
  • Layer half of the cooked beef and onion mixture in the casserole dish, then pour half of the soup mixture over it. Repeat the layers.
  • Sprinkle shredded cheese over the top and cover with aluminum foil. Bake for 40 minutes.
  • Remove foil, top with crispy fried onions, and bake uncovered for an additional 10 minutes until golden brown.

  • Let the casserole cool for 5 minutes before serving. Garnish with fresh parsley if desired.

Notes

For a richer flavor, use homemade French onion soup instead of canned. To make it extra creamy, add an additional 1/4 cup of sour cream.
