  • 1 medium green cabbage thinly sliced
  • 8 slices thick-cut bacon cut into small pieces
  • 1 large yellow onion thinly sliced
  • 3 cloves garlic minced
  • 1 tsp smoked paprika
  • 0.5 tsp sea salt
  • 0.25 tsp freshly ground black pepper
  • 1 tbsp olive oil optional

For Serving (Optional)

  • 2 tbsp fresh parsley chopped

  • Heat a large skillet or cast-iron pan over medium heat. Cook the bacon pieces until crispy and golden brown. Remove bacon from skillet, leaving drippings behind.

  • Add sliced onion to bacon drippings in the skillet and sauté until softened and lightly caramelized, about 5 minutes. Add garlic and sauté another minute until fragrant.

  • Place sliced cabbage into the skillet. If dry, drizzle olive oil. Cook, stirring occasionally, until cabbage is tender and lightly browned, approximately 10-15 minutes.

  • Sprinkle smoked paprika, sea salt, and freshly ground black pepper over the cabbage. Stir well to combine and cook another 2-3 minutes.
  • Return crispy bacon to the skillet, mix gently, and cook for 2 more minutes. Garnish with fresh parsley and serve hot.

Notes

For a vegetarian version, substitute bacon with smoked mushrooms or tofu. Adding a splash of apple cider vinegar or red pepper flakes gives extra zest!
