For the Pasta 8 oz spaghetti or favorite pasta For the Shrimp and Sauce 1 lb shrimp peeled and deveined 2 tbsp olive oil 4 cloves garlic minced ½ cup grated Parmesan cheese freshly grated ¼ cup fresh parsley chopped salt and freshly ground black pepper to taste ½ cup reserved pasta water
Cook spaghetti according to package instructions until al dente. Drain, reserving ½ cup pasta water, and set aside.
Heat olive oil in a skillet over medium heat. Add garlic and sauté for 1 minute until fragrant.
Add shrimp to skillet, cook 2-3 minutes per side until pink and cooked through.
Add cooked pasta, Parmesan cheese, and reserved pasta water to skillet. Toss gently until pasta is evenly coated and creamy.
Season with salt and pepper to taste, garnish with fresh parsley and additional Parmesan, and serve immediately.
For a richer sauce, add a splash of heavy cream or extra butter. Fresh shrimp will yield the best taste and texture.
