Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour sifted
  • 1/2 cup sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt

Wet Ingredients

  • 1/2 cup milk
  • 1/2 cup butter melted
  • 2 eggs large
  • 1 tsp vanilla extract

Fruits & Flavor

  • 1 cup blueberries fresh or frozen

Instructions
 

  • Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  • In a mixing bowl, whisk together flour, sugar, baking powder, and salt.

  • In another bowl, whisk the eggs, then add milk, melted butter, and vanilla extract.
  • Gently mix the wet ingredients into the dry ingredients until just combined. Do not overmix.
  • Fold in the blueberries carefully to prevent crushing them.
  • Fill the muffin cups about 2/3 full with batter.
  • Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.

Notes

For a crunchy topping, sprinkle sugar on top before baking. You can also substitute whole wheat flour for a healthier option.
