Ingredients
  

For the Cauliflower Casserole

  • 1 large head cauliflower chopped into bite-sized florets
  • 1 cup sour cream
  • 2 cups cheddar cheese shredded and divided
  • 6 slices bacon cooked and crumbled
  • 0.25 cup green onions chopped
  • 0.5 tsp garlic powder
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 400°F (200°C). Grease a casserole dish lightly with cooking spray or butter.
  • Steam or boil cauliflower until tender, about 5-6 minutes. Drain thoroughly to remove excess moisture.
  • In a mixing bowl, combine steamed cauliflower, sour cream, 1½ cups cheddar cheese, half of the crumbled bacon, garlic powder, salt, and pepper. Mix well to coat evenly.
  • Pour cauliflower mixture into prepared casserole dish, spreading evenly. Sprinkle remaining cheddar cheese and bacon crumbles on top.
  • Bake in preheated oven for 20-25 minutes, until casserole is bubbly, cheese is melted, and top is golden-brown.
  • Remove from oven and garnish with chopped green onions. Let cool slightly before serving hot.
