Ingredients
  

For the Sandwich

  • 4 slices whole-grain or multigrain bread toasted if desired
  • 4 tbsp hummus any flavor
  • 1/2 cucumber thinly sliced
  • 1/4 red bell pepper thinly sliced
  • 2 tbsp crumbled feta cheese
  • 1 tbsp black olives sliced
  • 1 tbsp red onion thinly sliced
  • 1 handful baby spinach or arugula
  • 1 tsp extra virgin olive oil
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper freshly ground

Instructions
 

  • Lay out the slices of whole-grain bread and spread 2 tablespoons of hummus on each slice.
  • Layer the thinly sliced cucumber evenly over two slices of the bread.
  • Add sliced red bell pepper and red onion on top of the cucumber for crunch and flavor.
  • Sprinkle crumbled feta cheese and sliced black olives over the vegetables.
  • Top with fresh baby spinach or arugula for an extra layer of greens.
  • Drizzle a small amount of olive oil over the filling and season with sea salt and black pepper.
  • Place the remaining slices of hummus-spread bread on top and press gently to secure the ingredients.
  • Slice the sandwiches in half and serve immediately. Enjoy with a side of olives or a light salad.
