Tender cod fillets oven-roasted to perfection with a flavorful blend of fresh herbs, garlic, and lemon. A healthy, quick, and delicious seafood meal ideal for busy evenings!
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Arrange cod fillets on the prepared baking sheet. Drizzle with olive oil and sprinkle evenly with minced garlic, fresh thyme, rosemary, salt, and pepper.
Place lemon slices on top of each cod fillet for extra flavor.
Roast in the preheated oven for 12-15 minutes until cod flakes easily with a fork and is cooked through.
Serve hot, garnished with additional fresh herbs and lemon wedges if desired.
