Ingredients
  

For the Cod

  • 4 fillets cod approximately 6 oz each
  • 2 tbsp extra virgin olive oil
  • 2 cloves garlic minced
  • 1 tsp fresh thyme chopped
  • 1 tsp fresh rosemary chopped
  • ½ tsp sea salt
  • ¼ tsp freshly ground black pepper
  • 1 lemon sliced
  • 2 tbsp olive oil extra for drizzling

Instructions
 

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Arrange cod fillets on the prepared baking sheet. Drizzle with olive oil and sprinkle evenly with minced garlic, fresh thyme, rosemary, salt, and pepper.
  • Place lemon slices on top of each cod fillet for extra flavor.
  • Roast in the preheated oven for 12-15 minutes until cod flakes easily with a fork and is cooked through.
  • Serve hot, garnished with additional fresh herbs and lemon wedges if desired.

Notes

Cod cooks quickly, so watch carefully to avoid drying out. Fresh herbs are best, but dried herbs can be used if fresh are unavailable.
