For the Salad
- 12 oz pasta rotini, penne, or your choice
- 1 can tuna drained
- ½ cup cherry tomatoes halved
- ¼ cup mayonnaise light or regular
- 2 tbsp fresh lemon juice
- ¼ cup red onion finely chopped
- ¼ cup fresh parsley chopped
- salt and freshly ground black pepper to taste
Cook pasta according to package instructions until al dente. Drain and rinse briefly under cold water, then set aside to cool.
In a large mixing bowl, combine cooled pasta, drained tuna, cherry tomatoes, red onion, and fresh parsley.
