1red bell peppercut into chunks
1red onionquartered into wedges

Instructions
In a large bowl, whisk together olive oil, lemon juice, minced garlic, oregano, thyme, smoked paprika, sea salt, and black pepper to make the marinade.
Add the chicken cubes to the marinade, toss to coat, cover, and refrigerate for at least 30 minutes (up to 4 hours for best flavor).
Preheat your grill to medium-high heat (about 400°F/200°C). Thread the marinated chicken onto skewers, alternating with red bell pepper chunks and red onion wedges.
Grill the skewers for 10-12 minutes, turning every 3-4 minutes, until the chicken reaches an internal temperature of 165°F (74°C) and has grill marks.
Remove from the grill, let rest for 5 minutes, then serve with warm pita, tzatziki sauce, and lemon wedges.
Notes
For an indoor option, use a grill pan or broil at 450°F (230°C) for 10-12 minutes, flipping halfway. Marinate longer for deeper flavor, but avoid exceeding 6 hours.
