  • 2 cups elbow macaroni, uncooked
  • 1 cup diced dill pickles
  • 1/2 cup finely chopped celery
  • 1/4 cup finely chopped red onion
  • 2 hard-boiled eggs, chopped optional

For the Dressing

  • 1 cup mayonnaise
  • 2 tbsp Dijon mustard
  • 2 tbsp pickle juice from the jar
  • 1 tsp sugar optional, for balance

  • Bring a large pot of salted water to a boil. Cook the macaroni according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

  • Before serving, give the salad a quick stir. Garnish with fresh dill or parsley and extra pickle slices for a beautiful presentation.
